is there a trick to baking in a gas oven with glass bakeware?

I was baking a quiche the other day and while the filling was perfect the bottom was completely blackened. I tried a second time and sat the pie plate on an aluminium baking sheet and still the bottom was burned. I am wanting to bake a caramel cheesecake but I’m afraid it will be ruined. What can I do?

Water bath is the answer, or reduce the heat. Glass will conduct heat easier then metal, and I found that lowering the heat will give you the best results when using glass bakeware. For the cheesecake though, I would use a water bath, it’ll keep everything just right. I hope this helped and good luck.
