How do you make a jelly roll?

Is it like an omlette?
It is not sponge cake, my late mother used to use eggs to make it.

Make sure you have a piece of parchment paper on the pan, so it easier to remove the sheet of sponge cake from the pan. After removing them the oven, let sit for a minute or two, dust powder sugar on top, and have a parment paper set out and remove the cake from the pan. Remove the top layer parmentpaper, and dust powder sugar on cake. While the cake is still hot, use the parment paper and roll up the cake and twist both end like a piece of candy with a wrapper. Let it cool and sit like that for a couple hours.

When ready, unwrap the parchment paper and sponge cake. Spread the filling and roll it back up, and you have a jelly roll.

You have to roll the parchment paper and sponge cake while the cake is still hot. Otherwise the cake will break up.
