Would it matter if I use a loaf pan / regular baking pan instead of a horizontal tube / Bundt pan?

You can use any of these pots, but I would suggest the loaf pan. Pound cakes are usually baked in a mold pans, but I only use about half of the dough. You could put the other half in regular skillet. The cooking time will remain more or less the same.
